Try this cocktail from Jeff Bareilles, Manresa's Wine and Beverage Director.
1 medium Indigo Rose Tomato sliced into quarters (or red tomato)
3, 2-inch celery stalks
1/2 ounce simple syrup
1/2 lime juice
2 Padron peppers
2 ounces Pisco
• Combine all ingredients in a shaker and muddle for about 30 seconds. Add ice and shake, then strain into a Martini glass and garnish rim with a small cherry tomato.
