Introducing Jim Rollston and Mitch Leinhard


We are pleased to welcome Jim Rollston as Beverage Director and Mitch Leinhard as Chef de Cuisine at Manresa. Rollston brings nearly 20 years of experience in the wine and hospitality industries to Manresa, including roles at the former Cyrus Restaurant in Healdsburg, Baumé in Palo Alto and the three restaurants of The Lodge at Pebble Beach. In addition to the wine program, Rollston oversees the beverage team, lending his expertise to beer, cocktails, spirits and more in pairing with Chef Kinch’s cuisine.


As new Chef de Cuisine, Mitch Leinhard credits his first job as a dishwasher in a small Florida-based Italian restaurant to kick starting his culinary career.  Moving up the ranks in the kitchen, Leinhard worked in a number of restaurants, later landing positions at Alinea and Grace in Chicago and Saison in San Francisco. In addition to helping lead the Manresa kitchen team, Leinhard is collaborating with Chef Kinch on new dishes and executes the daily changing menu in the restaurant.
