"Manresa Negroni" Cocktail Recipe
Try this cocktail from Jeff Bareilles, Manresa's Wine and Beverage Director.
Manresa Negroni (on the rock)
1 ounce Nolet’s dry gin
1 ounce Campari
1 ounce Barolo Chinato dry vermouth
4” strip of orange zest
• Stir the gin, Campari, and vermouth together in a pint glass. Pour over a large ice cube in a martini or rocks glass. Garnish with the orange zest.

"Mountain Julep" Cocktail Recipe
Try this cocktail from Jeff Bareilles, Manresa's Wine and Beverage Director.
Mountain Julep
1 1/2 ounces Manhattan Corn Whiskey or a clear corn whiskey of your liking
1/4 ounce mint simple syrup
1/2 ounce fresh Meyer lemon juice
1 mint leaf
• Combine all ingredients in a shaker with ice shake hard. Stain into a Nick and Nora martini or a martini glass of your choice. Garnish with a mint leaf.

"Lemon Zest" Cocktail Recipe
Try Manresa’s seasonal citrus cocktail from Jeff Bareilles, Wine and Beverage Director.
Lemon Zest
1 small egg white
1 1/2 ounces fresh Meyer lemon juice
1 1/2 ounces Lillet Blanc
1 ounce Beefeater Gin
1/2 ounce St. Germain Elderflower liqueur
1 dash Bitter Truth lemon bitters
• Build all ingredients in a shaker, then add ice. Shake vigorously, then strain into martini glass. Finish with a fine lemon zest grated over the top of the cocktail.

"Candy Cap Punch" Cocktail Recipe
Try this artisanal cocktail infused with candy cap mushrooms from Jeff Bareilles, Manresa's Wine and Beverage Director.
Candy Cap Punch
3 ounces candy cap mushroom infusion (below)
1 bottle (750ml) of dry lightly sparkling white wine such as Colline Savonesi Lumassina Frizzante produced by Tommaso Ruffino & Family Lumassina in Punta Crena, Italy
• In a punch bowl combine 1 bottle of sparkling white wine and 3 ounces of candy cap mushroom infusion, lightly stir and pour into punch glasses or Champagne coups.
Candy Cap Mushroom Infusion
450 grams cane sugar
675 grams granulated sugar
1000 grams water
212 grams glucose syrup
300 grams fresh candy cap mushrooms or 150 grams dried candy cap mushrooms
• Combine and whisk cane sugar, granulated sugar, water and glucose syrup in a large pot bring to a boil. Then add candy cap mushrooms remove from heat and let cool. Strain and refrigerate.

"Without a Trace" Cocktail Recipe
Try this artisanal cocktail from Jeff Bareilles, Manresa's Wine and Beverage Director.
Without a Trace
1/2 ounce Dolin Blanc Vermouth
7 pieces basil
1/2 ounce Buffalo Trace Kentucky Bourbon Whiskey
2 dashes Bar Keep Lavender Spice organic aromatic bitters
• Build together Dolin Blanc Vermouth and basil in a pint glass, then muddle. Add Buffalo Trace Whiskey and a medium scoop of ice and stir. Then strain into a single malt glass and garnish a small basil leaf.

"Manresa Snowball" Cocktail Recipe
The world is your snowball with this holiday cocktail from Jeff Bareilles, Manresa's Wine and Beverage Director.
Manresa Snowball
1 ounce Marker’s Mark
3/4 ounce Leopld’s Cherry Liqueur
1/4 ounce ginger simple syrup
1/4 ounce Marie Brizard Mint Liqueur
3 dashes chocolate bitters
1 large orange (for peel)
• Combine all ingredients in a pint glass with 1 scoop of ice and stir. Place ice sphere in a Nick & Nora Martini glass and strain combined ingredients over ice. Garnish with an orange peel.
The Nick & Nora Martini Glass is named after the lead characters from the 1930’s The Thin Man film series, Nick was played by William Powell and Nora was played by Myna Loy.

"Fig Sour" Cocktail Recipe
Welcome the holidays with good cheer and Manresa's festive cocktail.
Manresa Fig Sour
1 Monstreuse de Lipar fig, quartered
1/4 ounce lemon juice
2 ounces Maker's Mark
1 dash Jerry Thomas’ Own Decanter Bitters from The Bitter Truth
• Quarter the fig and place in glass with lemon juice, muddle. Add in the Makers Mark and bitters. Fill your glass with ice and stir for 20-25 seconds. Fine strain into the glass of your choice and garnish with a fig wedge.

"Pear Punch" Cocktail Recipe
Manresa elevates the classic fall fruit with this refreshing punch cocktail.
Pear Punch
2 quarter-inch slices of pear
1.5 ounces Pernod d’Absinthe
Top with Champagne
• Place the 2 slices of pear into your glass with the 1.5 ounces of Pernod d’Absinthe and muddle. Fill the glass with ice and shake for 10 to 15 seconds and strain into a Champagne coup. Top off glass with Champagne and garnish with a small slice of pear.

"Blood and Sand" Cocktail Recipe
Blood and Sand is a scotch based cocktail introduced in 1922. It was named for Rudolph Valentino's 1922 bullfighter movie Blood and Sand. The red juice of the blood orange in the drink helped link it with the film. The recipe first appeared in The Savoy Cocktail Book, originally published in 1930. Blood and Sand is one of the few classic mixed drinks that includes scotch.
Manresa Blood and Sand
3/4 ounce Talisker scotch
3/4 ounce Noilly Prat Rouge
3/4 ounce cherry infused rum, or substitute with Heering cherry liquor
2 dashes orange bitters
Orange peel
Luxardo cherries
• Add all liquid ingredients to stirring glass with ice and stir.
• Strain into coup.
• To garnish, take a long twist from an orange and clean up the edges. Stick a tooth pick through the twist, then through a Luxardo cherry, then back through the twist, wrapping it around half of the cherry, and repeat with another cherry.
Manresa Blood and Sand

"One in Twenty" Cocktail Recipe
The name "One in Twenty" references the famed possibility that you never know when a Padrón pepper is going to be fiery hot.
One in Twenty
2 medium Padrón peppers
1/2 ounce fresh squeezed lime juice
1 1/2 ounces Los Azulejos silver tequila
1/2 ounce ginger infusion
3 dashes of The Bitter Truth xocolatl mole chocolate bitters
• Combine Padrón peppers and lime juice in a pint glass and muddle. Then add tequila, ginger infusion, bitters, ice and shake well. Fine strain into a coup or martini glass and garnish as desired.
Ginger infusion
2 cups unpeeled, washed, fresh ginger, roughly chopped
2 cups sugar
6 cups water
• Process ginger chunks in a food processor or blender until finely chopped. Place in a large pot. Add sugar and water to the pot and stir. Bring to a boil slow then reduce to a simmer over medium-low heat and cook for one hour until a rich syrup is created. Strain the syrup twice through cheese cloth or a sieve into a large jar or bottle. Refrigerate.
Notes
The cocktail pictured is garnished with a borage flower.
Ginger infusions and syrup are available at any fine liquor store.

Mr. McGregor’s Garden
2 strawberries
4 cucumber spears
Dash cherry bitters
Dash lemon bitters
1 1/2 ounces Pimm’s #1
1/2 ounce corn whiskey
• Place strawberries, cucumber spears, and bitters into a pint glass and muddle for 15 to 20 seconds, crushing the cucumbers while turning the strawberries into a pulp.
• Add the remaining ingredients, fill with ice, and give a hard shake for 20 seconds.
• Strain over ice in a glass garnished with cucumber wheels and a lemon wheel.
Mr. McGregor’s Garden

"Cristo Carnivále" Coctail Recipe
Manresa's festive Cristo Carnivále cocktail captures the exotic spirit of Rio's street
parades. Try this seductive cocktail if you're ready to samba.
Cristo Carnivále
1 1/2 ounces Wodka Polish Vodka 80
1 1/2 ounces passion fruit infusion (see below)
1 ounce lemon juice
• Add ice and hard shake into a Martini glass
• Garnish with a viola flower
Passion fruit infusion:
2 cups water
1 cup sugar
• Bring to boil, then whisk in 220g of frozen passion fruit purée
Note: Try Boiron frozen passion fruit purée if you don't have access to fresh passion fruit
Cristo Carnivále

"Aviation" Cocktail Recipe
Take flight with this classic cocktail in the spirit of the Wright Brothers, Amelia Earheart, and Howard Hughes.
Aviation
1 Luxardo Maraschino cherry
3 drops of Crème Yvette violet liqueur
1 1/2 ounces Aviation gin
1/2 ounce Luxardo Maraschino liqueur
1/2 ounce fresh lemon juice
1 lemon twist garnish
• Place a Luxardo cherry in the bottom of a Martini glass
• With an eyedropper coat the cherry with Crème Yvette liqueur
• In a shaker build together Aviation gin, Luxardo Maraschino liqueur and lemon juice
• Add ice, shake and strain into Martini glass
• Garnish with a lemon twist

Love Apple Farms—Upcoming Events & Classes
Love Apple Farms’ annual Tomato Seedling Sale kicks off on Saturday, March 17, with a new retail space at Ivy’s Porch in Scotts Valley. Grow some of the unique tomatoes used at Manresa in your own backyard with a selection of over 100 varieties of heirloom and hybrid tomatoes. This year’s seedling sale will not only feature thousands of heirloom seedlings for purchase, but will also showcase beautiful display gardens allowing guests to learn how to plant their gardens and incorporate new ideas into their home landscape. The sale runs until Saturday, June 30 and hours of operation are as follows: 10:00 a.m.–5:00 p.m. Mondays through Saturdays and 11:00 a.m.–4:00 p.m. on Sundays. Ivy’s Porch is located at 5311 Scotts Valley Drive in Scotts Valley.

Revive yourself with Manresa's modern take on this classic Prohibition Era cocktail.
Corpse Reviver #1
3/4 ounce Dolin Rouge Vermouth
3/4 ounce Bonny Doon Pommeau
1 1/2 ounces Saint James Dark Rum
1/2 ounce date-infused Dewar's White Label Scotch
1 dash lemon bitters
• Pour one ingredient at a time and then stir together Dolin Rouge Vermouth, Bonny Doon Pommeau, Saint James Rum, date-infused Dewar’s White Label, and lemon bitters.
• "Hard shake" and strain into a cocktail glass that has been garnished with a lemon twist.
» Mixology tip: To make date-infused Dewar's White Label Scotch, simply place dates and scotch in a glass jar with a lid, and store in a cool, dark place for up to 14 days.

Cheers! Manresa and GQ
GQ Chef of the Year David Kinch
was sick of sending early arrivals elsewhere for a cocktail. The
fourteen-seat lounge showed up this spring in a major renovation of
Manresa, his Silicon Valley temple to the local and seasonal, where most
of what you eat comes from Love Apple Farms
in the nearby Santa Cruz Mountains. Kinch favored classic recipes for
the cocktail program, but then sommelier Jeff Bareilles got a noseful of
Love Apple's Bolivian coriander, which is not a euphemism for cocaine.
"I thought, I can make a cocktail with this," he says. Manresa treats
the cocktail as an amuse-bouche,
with drinks that are light and fresh. Like the menu, they're inspired
by hyssop, pungent Black Prince tomatoes, dates and whatever the farm
provides. The Shizuka is built around the mild, mintlike herb shiso,
with a sturdy scaffolding of Hendrick's Gin, Fentimans Tonic, and Green
Chartreuse V.E.P. It leaves the head clear for decision-making, like
whether to move into the dining room or spend your night at the bar. —James O'Brien

"Sanguine Valentine" Cocktail Recipe
Enjoy this Valentine's Day cocktail as made by Manresa mixologist Scott McKinney
Sanguine Valentine
1 1/2 ounces Hangar One straight vodka
1/2 ounce Lillet Rouge
1/4 ounce St. Germaine elderflower liqueur
1/2 ounce fresh blood orange juice
1/4 ounce fresh lime juice
• Combine Hangar One straight vodka, Lillet Rouge, St. Germaine elderflower liqueur, blood orange juice, lime juice and ice in a cocktail shaker and shake hard
• Strain into martini or Champagne coupe and garnish with a blood orange twist
Sanguine Valentine
1 1/2 ounces Hangar One straight vodka
1/2 ounce Lillet Rouge
1/4 ounce St. Germaine elderflower liqueur
1/2 ounce fresh blood orange juice
1/4 ounce fresh lime juice
• Combine Hangar One straight vodka, Lillet Rouge, St. Germaine elderflower liqueur, blood orange juice, lime juice and ice in a cocktail shaker and shake hard
• Strain into martini or Champagne coupe and garnish with a blood orange twist
